The homemade ice cream experience starts with the ice cream base, which then turns into the frozen dessert we all know and love. Whether the ice cream is milk or water-based, the base usually includes milk, cream, sugar, and eggs (whole or just the yolks). There are different bases to experiment with, and they range from fuss-free to ones requiring more attention to detail—yet they're still incredibly simple. Types of Ice Cream

Custard-based.

Custard-based ice cream, the most common type, is a French-style ice cream. This base does take a little babysitting and caution to ensure the eggs don't scramble. Philadelphia-Style

Philadelphia-style ice cream, sometimes known as American-style ice cream, doesn't contain eggs. The base is made up of milk, cream, or a combination of both. It's frozen just like custard-based ice cream, yet the texture can lean grainy because of the lack of a luscious custard.

Considerations Before You Get Started

To make traditional ice cream, including either of the types described above, you need an ice cream maker. Churning ice cream prevents large ice crystals from forming and clumping together, therefore smaller ice crystals encourage a smoother texture in the finished product. While ice cream makers range in price and quality, it's easy to find fairly inexpensive options at around $20.

There are also several no-churn options to make ice cream without a machine . They range from shaking up heavy cream, sugar, and mix-ins in a mason jar, to whipping up a sweetened condensed milk -and-heavy cream base with fruit.

Customizations

There are infinite possibilities when it comes to flavoring homemade ice cream. Just before transferring to the freezer, fold in a handful of chopped fresh fruit or chopped mix-ins like pretzels, marshmallows, nuts , chocolate chips, or candy; a generous drizzle of syrups, nut butters , melted chocolate, or a smidge (or more!) of instant espresso powder or freeze-dried fruit pulsed in a food processor into a powder. Set Aside a Bowl With Ice

Prepare an ice bath in a large bowl and set a clean bowl over it. (This helps to cool down the base later.) Place a fine mesh sieve over the bowl; set aside.

Mix and Simmer Milk, Cream, Sugar, and Vanilla

Combine milk, cream, half the sugar, and vanilla in a large saucepan. Bring to a gentle simmer over medium, stirring occasionally, until sugar is dissolved. Watch carefully to ensure the milk does not boil. Remove from heat.

Beat the Eggs

Beat the egg yolks with a pinch of salt and the remaining sugar in a large bowl until well combined and the mixture lightens in color.

Add Milk Mixture

Gradually whisk in half the hot milk mixture into the egg yolk mixture to warm the eggs slightly and help to keep the eggs from curdling in the following step. Return the egg yolk mixture to the saucepan with the remaining milk mixture.

Thicken the Custard

Cook custard over medium, stirring throughout, until thickened and custard coats the back of a wooden spoon, 4 to 6 minutes. Custard should be thick enough that it leaves a trail and does not come back together when you run your finger through it on the spoon.

Strain the Custard

Strain the custard through a fine mesh sieve into the prepared bowl over ice. Discard vanilla pod, if using. Let cool, stirring occasionally, for about 20 minutes. Custard can be made up to one day ahead and stored in an airtight container in the refrigerator.

Move It to the Ice Cream Maker

Process custard in an ice cream maker according to the manufacturer's instructions until the base has thickened.

Transfer and Freeze

Transfer to an airtight container and freeze until firm for at least 4 hours and up to 1 week. Makes 1 quart.

Easy Cookies 'n' Cream Ice Cream

With just five ingredients, this crowd-favorite flavor omits eggs in the ice cream base. You'll need an ice cream maker to throw together this ice cream recipe, but the easy base is fool-proof and comes together in a snap.

No-Churn Roasted Strawberry Ice Cream

Homemade Apple Cider Donut Ice Cream

This apple cider donut ice cream includes a base of apple cider flavored ice cream with chunks of apple cider donuts stirred throughout.

Ingredients (makes 1 quart):

  • 4 cups apple cider
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup brown sugar
  • 4 egg yolks
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1-2 apple cider donuts, roughly chopped

To make your apple cider donut ice cream, begin by making your apple cider syrup. This can be done ahead of time and refrigerated until ready to use. Add 4 cups apple cider to a pot over medium-high heat.

MAKES  ONE 9 IN [23 CM] LOAF CAKE

This cake is a showstopper, and a perfect ice cream treat to serve around the holidays. There is much room for interpretation, however, and any of the No-Churn Ice Cream flavors (below) can be swapped in for everyday afternoon ice cream cake snacking. (I particularly like replacing the pumpkin with the coffee-flavored ice cream.)

1½ cups [150 g] store-bought cinnamon graham cracker crumbs

4 tablespoons [56 g] unsalted butter, melted

ICE CREAM CAKE

1 recipe No-Churn Ice Cream (see below), salted caramel variation

1 recipe No-Churn Ice Cream (see below), pumpkin variation

1 recipe Meringue (see below)

Grease a 9 by 4 in [23 by 10 cm] Pullman pan and line with a parchment sling. 

FOR THE CRUST In the bowl of a food processor fitted with a blade, pulse the graham crackers until broken down into crumbs. Pour into a medium bowl, then add the melted butter and stir until all the crumbs are coated. Pour into a large skillet and heat over medium heat, stirring frequently, until the crumbs are lightly toasted and fragrant (see note).

Pour half of the crumbs into the prepared pan. Use a measuring cup or spoon to press the crumbs evenly into the bottom of the pan. Let cool to room temperature. 

FOR THE ICE CREAM CAKE Make the salted caramel ice cream as directed below, and pour a little over half of it into the pan; you want the ice cream to come halfway up the pan. Sprinkle the top with the remaining crumbs, then freeze until firm, about 2 hours. Make the pumpkin ice cream as directed below, and pour enough into the pan until it is almost to the top. Place the ice cream cake in the freezer and freeze for at least 8 hours or overnight. The remaining ice cream can be poured into separate containers and frozen.

TO ASSEMBLE Use the parchment sling to gently remove the cake from the loaf pan. Working quickly, remove the parchment paper and set the cake on a serving platter. Use a spatula to spread the meringue evenly over the top of the ice cream cake and, if desired, use a spoon to create swirls. Hold a kitchen torch 1 to 2 in [2.5 to 5 cm] away from the cake and touch the flame down in between the swirls; they will toast and brown (if the swirls catch on fire, blow them out). Slice and serve immediately. The cake can be stored in the freezer, covered, for up to 3 days. 

NOTE: In order to keep these recipes no-bake, I use the stovetop to toast the cookie-crumb crust in several recipes. If you would prefer to use the oven for this step, you can! Press the cookie crust into the prepared pan and bake at 325°F [170°C] until golden and fragrant.

No-Churn Ice Cream

I had a whole chapter of no-churn ice cream in my first book, The Vanilla Bean Baking Book, and I find it a welcome alternative to churning homemade ice cream, as it takes less time and doesn’t need an expensive machine.  

MAKES ABOUT 4 CUPS [960 G]

One 14 oz [396 g] can sweetened condensed milk

1 tablespoon pure vanilla extract

1 vanilla bean, seeds scraped (optional)

¼ teaspoon salt

2 oz [57 g] cream cheese, at room temperature

2 cups [480 g] heavy cream

In a large bowl, whisk together the sweetened condensed milk, vanilla extract, vanilla bean seeds (if using), and salt until completely combined.

In the bowl of a stand mixer fitted with a whisk, beat the cream cheese on medium speed until smooth. Turn the mixer to low speed and add the heavy cream in a slow, steady stream, mixing until combined. Increase the speed to medium-high and whisk until stiff peaks form, 3 to 4 minutes.

Add half of the whipped cream mixture to the sweetened condensed milk mixture and whisk until completely combined. Using a rubber spatula, gently fold in the remaining whipped cream mixture until no streaks remain. Pour into a 9 by 4 in [23 by 10 cm] Pullman loaf pan (see note, page 284) and freeze until firm, 6 hours, or up to 1 week. 

NOTE If you don’t have a Pullman pan, a regular 9 in [23 cm] loaf pan covered with plastic wrap will work too. 

• Salted Caramel No-Churn Ice Cream : Make the no-churn ice cream as directed. Pour half of the ice cream mixture into the Pullman pan, then dollop ½ cup [180 g] of Caramel, salted caramel variation (page 276), over the ice cream. Use the tip of a butter knife to swirl the mixture into the ice cream. Pour the remaining ice cream on top, then dollop with another ½ cup [180 g] of salted caramel. Swirl again with the butter knife. Freeze as directed.

• Pumpkin No-Churn Ice Cream: Add ¾ cup [168 g] of unsweetened pumpkin purée, ½ teaspoon of ground cinnamon, ¼ teaspoon of ground ginger, ¼ teaspoon of freshly grated nutmeg, and a pinch of cloves to the sweetened condensed milk mixture.

MAKES 2 CUPS [240 G]

I grew up not liking meringue. My grandma topped her pretty pies with it constantly, but I found it sweet and bland and I avoided it at all costs. When I started making it myself, I became obsessed with the transformation of sugar and egg whites. Maybe it’s the Minnesotan in me, but I find the snowy piles in my mixing bowl beautiful. A bit of salt and a hefty splash of vanilla helps keep this from tasting flat and overly sugary. This recipe can be doubled. 

A few drops of lemon juice

1 cup [200 g] granulated sugar

½ cup [113 g] egg whites (from 3 or 4 large eggs), at room temperature

Pinch of salt

1/8 teaspoon cream of tartar

2 teaspoons pure vanilla extract

DIRECTIONS  

In a medium saucepan over medium heat, bring 1 in [2.5 cm] of water to a gentle boil.

Pour the lemon juice into the bowl of a stand mixer and use a paper towel to wipe the juice around the inside of the bowl (this helps remove any trace of grease, which can hinder the whites from whipping properly). Add the granulated sugar, egg whites, salt, and cream of tartar to the mixing bowl and stir gently with a rubber spatula until completely combined.

Place the bowl over the saucepan, being careful not to let the water touch the bottom of the bowl. Stir with the spatula until the sugar is completely dissolved and the mixture registers 160°F [70°C] on an instant-read thermometer, scraping down the sides of the bowl with the spatula (to ensure no sugar crystals are lurking, which can cook the egg whites), 4 to 5 minutes.

Place the bowl in the stand mixer fitted with a whisk and whisk the egg whites on low speed for 1 minute, until foamy. Slowly increase the speed to medium-high and beat for 8 to 10 minutes until stiff, glossy peaks form. The bowl should feel cool to the touch at this point. Add the vanilla and mix on low speed until combined.

Use the meringue immediately. You can use the meringue unbaked to decorate at this point, or continue on with the recipe to make baked meringues.

The unit comes in at 16.5" high (meaning it fits under most cabinets), 16" deep, and 13.5" wide (additional waterside tank included). It takes up a hefty footprint on your countertop, but that's true of most devices in this category.

Setting up the machine was a little cumbersome, but wasn't too terrible for a one-time process. It involved creating an account and password, verifying each, connecting to both Wi-Fi and Bluetooth, and entering codes from a label on the back of the machine.

While it's running, the Opal 2.0 makes roughly a pound of ice an hour. There's no cooler in the catch bin, so you're making ice as needed, and any ice that melts in the bin is recirculated into the water reservoir below. 

But where the Opal 2.0 shines above its competition is its smart connectivity. 

All the smart features for the ice maker live in the Smart HQ app, the current home of all GE smart appliances and products . With the app, you can control the bin light (off, dim, or on), turn on the maker, and set a schedule. 

You'll also receive app alerts when the unit needs cleaning and descaling (a process that just involves removing a filter, running a very diluted bleach solution through the tank, and draining the line), which is about once a month for me, or if the ice bin wasn't properly replaced.

So far, the smart features have worked flawlessly. I set up a preferred schedule when I first got the device, and for over a month my ice maker has quietly whirred to life at 6 each morning Monday to Friday and the first nuggets have hit the bin just before I wake up at 6:15 a.m. When I turned the schedule off for a week when I was out of town, the ice maker stayed silent.

The on/off feature works as intended, as I can toggle the power button in the app and the machine responds a few moments later. This is an especially useful feature when I'm around town, as I can turn the maker on when I'm headed home and arrive at my favorite ice waiting on me. 

Of course, it's also compatible with Alexa and Google Home. 

Do you need  your ice maker to be Alexa-compatible? Well, it's awfully handy at times, like when you're in the living room and you'd like a cold drink. You can simply speak the command and ice is on the way. I'm a sucker for smart home tech, and asking Alexa to "make ice" and hearing the machine begin humming in the next room still makes me smile every time.

Like a lot of smart home features, I questioned at first whether it would be an option I'd even use, but quickly found it becoming a part of my daily routine.

There is just one issue with the GE Opal 2.0, and it can be a big one. This is a hefty product, and I don't mean the physical size. The price comes in at nearly $600 (even more with the additional side reservoir ), meaning this certainly isn't a cheap ice maker. Yes, there are more affordable options, but none of those provide the smart capabilities of the Opal, which moves the needle quite a bit in my book.

GE doesn't tout the Opal 2.0 nugget ice maker as a budget-friendly option. Bluntly, at more than double the price of less expensive machines, it's quite expensive for what it is, and that price will absolutely be a barrier for some people. 

ZDNET's buying advice

This was a luxury purchase, and I knew that going in. But it's been completely worth the price so far. Beyond performing flawlessly both on the mechanical and technical side, it's become a bit of a conversation piece as well, as everyone who has ever seen it immediately says something along the lines of "Oh, it makes that ice!?"

So if you find yourself craving chewable ice as I do and don't mind splurging a little to get that ice on schedule automatically or at the tap of a phone button (and impress your friends in the process), you won't find a better option.

A Grant County ice cream shop is working to make a difference in the lives of employees with special needs.

The shop is called the Kentucky Y’all Icebox, located in Williamstown.

Mona Lazarus spent two decades as a special education teacher. Now, her daughter runs the Kentucky ice cream shop, offering meaningful employment to people with disabilities through a partnership with DREAM Grant County.

They say special education classes are a good start but many of those do not typically offer job skills training. Rachelle Morse is among those trying to change that.

"There's this great need, lack of resources, and of course people aren't going to understand our program, until they see it working," Morse said. "But it is such a simple concept, just people to work in your business."

Lazarus is now the director of DREAM Grant County and is aiming to create opportunities for people with special needs across the United States.
