This is worth 20% of the final mark this is submitted in journal form in sixth year.

Written Exam paper – 80%

The written examination is a two-and-a-half hour exam at both levels and has three sections:

Section A (60 marks)

12 short questions and you're marked on you're best 10.  These deal mainly with all the core areas. 

Section B (180 marks)

5 questions of which you must answer question 1 (Food Science and Nutrition) and any other 2 questions (from the other Core Areas).  

Section C (80 marks)

3 questions of which you must answer one question, an elective question based on your chosen elective.

Future Careers with Leaving Certificate Home Economics

Home Economics is not an essential requirement for any courses in the CAO system but teaches useful cooking skills that will be used by all. Future careers include Fashion, Cookery, Chef, Tourism, Business, Social Work.

Sample chapter: Carbohydrates – Leaving Cert Home Economics

Classification of carbohydrates.

• Monosaccharides: a simple sugar that contains one single sugar unit. Examples include glucose and fructose

• Disaccharides: formed when two monosaccharides join together resulting in the loss of water. This is known as the condensation reaction. Examples include sucrose and lactose.

• Polysaccharides: formed when three or more monosaccharides join together resulting in the loss of water with each new link. Chains can be straight or branched. Examples include starch, glycogen and cellulose.

Properties of Sugar

• Assist Aeration: when sugar is whisked, aeration occurs. The sugar helps to denature the egg protein, causing it to unfold and entrap air bubbles.
• Caramelisation: on heating, sugar melts and caramelises. Caramelisation normally occurs at 160 °C resulting in an attractive brown colour and a sweet taste. If overheated (past 177 °C), caramel will carbonise and burn.
• Maillard Reaction: the non-enzymatic browning of food due to a reaction between certain amino acids and sugars under dry heat e.g. shortbread biscuits
• Crystallisation: if more sugar is added to a liquid than it can dissolve, crystals form which can solidify when set e.g. jam making.
• Hydrolysis: this is the reverse of the condensation reaction. It occurs during digestion. Water and enzymes split disaccharides into two monosaccharides.
• Inversion: this is when sucrose splits into glucose and fructose, it is an invert sugar. This is used in jam making.

Properties of Starch

• Gelatinisation: when starch is combined with a liquid, the grains swell and burst, they absorb the liquid. This increases the viscosity. As the temperature increases, it becomes more viscous and forms a sol.
• Hydrolysis: this is the reverse of the condensation reaction. Occurs during digestion. Water and enzymes split disaccharides into two monosaccharides. 
• Dextrinisation: when starchy foods are heated, dextrins form. More heat causes pyrodextrins to form which causes colour to develop e.g. toast

Properties of Non Starch Polysaccharides (NSP)

• Cellulose: insoluble in water and cannot be digested by the body without any water. It helps to stimulate peristalsis and prevent bowel disorders.
• Pectin: present in plant cell walls ( in fruit and vegetables). Only present when they are ripe. It is used as a setting agent. For it to be extracted, heat and acid are needed.

Effect of Heat on Carbohydrates

Dry Heat: caramelisation, maillard reaction

Moist Heat: syrup formation

Biological Function of Carbohydrates

Supplies the body with heat and energy

By consuming enough carbs, protein can fulfill its primary function

Stimulates peristalsis

Excess carbs are converted to glycogen and kept as long term energy store

Absorption of Carbohydrates

After digestion, the monosaccharides are ready to be absorbed by the small intestine. They pass through the wall of the villi and into the bloodstream.

Glucose is then: 1) oxidised to produce heat and energy 2) converted to glycogen and stored in the liver and muscles (long term energy) 3) excess glucose is converted to fat and stored as adipose tissue under the skin

Writing in Home Ec

Using writing prompts for home economics will get your students thinking about the many ways that home economics applies to their lives.

School-taught home economics has come a long way since the last century. Commonly known today as family and consumer sciences, home economics is a class for every student, not just the girls. Life skills such as planning meals, balancing checkbooks, and even buying a car are topics of discussion. In addition, students learn about consumerism, volunteerism, human development, and wellness.

How does writing fit into this curriculum? When used as a means for students to reflect on their learning in journals, writing prompts become a guide for scaffolding.

As students learn and discuss various life skills, scenarios from their own lives can surface. If they have a family background where keeping house, balancing a budget or shopping is problematic, they will either feel ashamed to say anything in class or fabricate a dream family to compensate for their feelings of inadequacy. Providing a means for them to reflect on what they are learning helps them to see things differently. Writing also gives them a means to ask questions without having to stand before their classmates.

Why Writing

The objectives for utilizing a reflective writing journal in home economics by providing students with writing prompts is to

• Focus their writing,
• Enable them to reflect on specific areas and
• Develop their ability to write coherently on a topic.

Keeping journals in home economics class scaffolds what is taught as well as allows students a means to voice their inner thoughts on the given subject.

Students in a home economics class are assigned daily/weekly reflective journal writing using prompts. Click on this downloadable list of Home Economics writing prompts ; they should be relevant to what is being taught.

Assessment of the writing journals is informal. Students’ writing is not corrected for a grade but rather, teachers respond to what is written in a positive mentoring style. Reflective journals are a tool for both student and teacher, as they will show what has been learned, how it has been absorbed and how the student feels about the topic. Teachers can take note of topics that seem to mystify the majority of the class as well as those struggling with a particular concept.

Sample Assignment

One of the common topics of today’s home economics class is balancing a budget. After the class has been shown how to figure out a budget and what is entailed in keeping it, they would be assigned their reflective journal writing prompt. This could be as follows: You and your partner have excess cash of $200 that is slated for your savings account. Before a deposit is made, your partner uses the money for a shopping spree, leaving only $20. How do you feel about this? What ways can you think of that will avoid this from happening in the future?

This writing prompt will allow students to

• Think in real-life terms,
• Express their feelings on a situation they might face in life,
• Allow them to problem solve prior to ever facing such a situation.

This writing prompt will give them the opportunity to practice the skills they have been taught in class as well as develop strategies that they can utilize in their own lives.

By reading and commenting on the journals, teachers can help students who may have problems guiding them to resources before they become adults who act irresponsibly.

We’ve Come a Long Way

The home economics class of yesteryear with the aprons, ovens and sewing machines has morphed into high tech classrooms with computers, lessons on safety in the home as well as the kitchen and life skills taught by experts in the field. While home ec may have grown up to be family and consumer science , the students in the class are still teenagers who need more than facts and figures thrown at them. Reflective journals that use writing prompts for home economics classes provide a means for the students to develop their skills in order to become capable, responsible adults.

Balance of Interests as a Principle of Civil Law: Some Aspects of Legal Consciousness

The research considers the category of reasonable balance of interests in the context of civil relations. The authors of the article highlight the need to restrict permissibility as a method of civil regulation aimed at protecting the rights and interests of the weaker party in some legal relations. A reasonable balance of interests is ensured by laws and agreements, whose conditions become the subject of a judicial dispute in the absence of a mandatory rule. The authors have analyzed judicial acts conditioned by the need to maintain a reasonable balance of interests. As a result, they have determined that the first condition for applying the fair balance principle is the equivalence of counter-performance in the absence of both excessive benefits and excessive losses for the parties. The second condition is the party-related division in some civil relations. The authors have concluded that the risks of negative consequences should not be borne only by the weaker party if the latter could not reasonably foresee the consequences upon concluding the relevant agreement. Methods. The study is based on the comparative analysis of the Russian scientific doctrine and judicial practice. The main approach to the analysis of the legal tools in question is the method of system analysis. In addition, the authors used the structural-functional method and general scientific methods of cognition. The study aims at determining the principle of a reasonable balance of interests in civil law, its essence, necessity and expediency in the system of law enforcement. The authors aim to define conditions for applying legal norms to achieve a reasonable balance of interests among all parties in disputed legal relations. Results. The study results let the authors claim that the risks of negative consequences should not be borne only by the weaker party if it could not reasonably foresee such consequences upon concluding the agreement and the imbalance of interests among parties in civil-legal relations is caused by the violation by one or another party of the principles of fair practice and reasonableness . Although a reasonable balance of interests is a counterweight to the principles of contractual freedom and free will, courts should apply it to ensure the right of justice.
